1 small turnip, chopped (optional)
1 12 oz bottle beer, such as a lager or ale (or you can substitute 1 ½ cup dry red or white wine)
½ cup beef, veal, chicken or vegetable stock or water
1 tablespoon tomato paste
1 bay leaf
3 or 4 sprigs fresh thyme, leaves only, or ½ teaspoon dried
2 tablespoons unsalted butter
